This jam flavor… well, this jam flavor was born thanks to another jam flavor on this site, my Carrot Cake Jam…
Every year I make a Caramel Apple Pie… usually during the holidays, and usually only once a holiday season; I’ll either make it for Thanksgiving, or Christmas — it is labor intensive; I finely grind pecans to put in the crust, I make my caramel from scratch, I use anywhere from 4-6 different apples in the pie, for each different variety of apple brings a different quality, taste, and attribute to the pie… And I hear people say that my pie tastes like none they’ve ever had before… so, since people like it so much, I try and limit how often I make it. Maybe in the back of my mind, I think that if a person doesn’t get it that often, then they’ll want it even more when they can get it… flawed logic, I know… but that’s where I’m at!
Well, anyway… this particular year, I actually made it twice, and one of my friends happened to be there both times… well, she made sure she was the first to grab a slice, and as she came over to thank me, she exclaimed that if she could spread that pie on a cracker, she would! And I thought, hmmm…. I did it with carrot cake; could I make an Apple Pie Jam? And so the experimentation began… I didn’t want to put dairy in the jam, but I did want the caramel aspect flavor wise, so I played with sugar ratios — instead of 100% raw cane sugar, which is my usual go to because you end up with just a kiss of molasses, I substituted dark brown sugar for some of the raw cane sugar, but I added the dark brown sugar at the very beginning, in a hot, dry stock pot with just the apple pieces and the dark brown sugar, and I let the dark brown sugar caramelize with the juices from the apple pieces, and something similar to caramel began to form… from there I kept building, and building, and the result was AMAZING! And the house smells exactly the same way it does when I make the pie! So good… And now it’s in jars… just waiting for you to give it a good home… 😀
I love all of my jams, preserves, butters and jellies… but I am especially proud of this one; the flavor is PHENOMENAL.
And to date — this is the only flavor where I had presales; I had people request this, and preorder it starting the day after it was announced. Black Forest Jam may be the most ordered, and restocked flavor to date [that is a another story for another day!!], but Apple Pie Jam holds the record for most jars sold before it even went on sale… So get your jar today, before they’re all gone; a number of them already are spoken for…
