There are times when I am eating something and I think, ‘Man, this would make a GREAT jam flavor!’… that thought occurred to me earlier this year when I was vacationing in St. Lucia with my family. One of the bartenders there concocted a drink for me after asking me a litany of questions about what flavors I liked. We tried one or two cocktails that were good, but not earth shattering… but cocktail number 3; THAT was the winner!
Heavy on the coconut, with a kiss of lime, made with both dark rum and coconut rum, THAT WAS THE WINNER! And that flavor combination drove me to create this Marmalade… it took MONTHS; COVID, shelter in place months, to get the flavor combination just right, but I did it, and just in time for it to join the line up this weekend… COCONUT MARMALADE — give it a try; every time I taste it, it takes me right back to St. Lucia. 😀
