One of my favorite flavors of pie to bake is Blackberry Apple… well, most anything with blackberries – they are a particular weakness of mine!
When we moved into our new house 6 years ago, I planted [2] boysenberry vines [my absolute favorite!!], and a blackberry vine. We were lucky enough to have quite prolific vines, that yield nice sized crops at various times during the year. The berries run the gamut — some are blackberries, some are boysenberries, and some are this wonderful hybrid berry; and all of them are quite flavorful, with a flavor that is slightly different, and a bit more complex than the berries you find in your local supermarket, grocery, or Farmer’s Market. These same berries are the ones that I use in my ‘Double ‘B’ Berry Preserves… and now here, in my Blackberry Apple Jam. Also… they are DYNAMITE in any baked goods that I make!
I baked a pie recently using apples that I had left over after I made a replacement batch of Apple Pie Jam, but I didn’t have quite enough to do a proper pie. I noticed that there were berries available, so they ended up getting combined into a pie. And that pie was AMAZING! And much like the evolution of the Carrot Cake Jam, and the Black Forest Jam, my mind starting percolating… and the result is now available on the site!!
