Italian Lemon Jam [Lemon & Vanilla]

The most wonderful experiences can come from traveling abroad…

Recently, my family traveled to Malta to celebrate my 60th Anniversary of my husband Paul’s parents, Mike & Linda… for Paul and I, we had a layover in London.  While waiting at the airport to begin the second leg of our trip, I had the most delightful gelato… Lemon & Vanilla!  I’d had this combination before, ironically during our last family trip together to Italy; that particular combination appeared in gelato form, cookie form, tart form… it was a popular, and delicious flavor combination.

It struck me that it would be a fun flavor for my yearly new flavor introduction at the Men’s Retreat that I make jam for, so I set about a bit of ‘jam play’ in my kitchen… this one took a little more experimentation than usual; it wasn’t easy hitting upon the the right blend and balance of lemon and vanilla, but then the alchemy gods smiled upon me, and I was blessed with the jam I was seeking… So much flavor, with just the right blend of tartness and sweetness… and a nice, huge ‘hug’ of vanilla that gives the jam the perfect finish.  It was so well received at the Knitting Retreat this year, so once again, I’m making this flavor available for purchase… I think you’ll love it as much as my friends do!! 🙂
