Mint Medley [Spearmint & Peppermint] Jelly

I’ve been wanting to make Mint Jelly for quite some time now, but the planets never really aligned… until now.  Whenever I looked at mint at the local Farmer’s Markets, there wasn’t really much to choose from, and the quality wasn’t all that great.  And I had it in my mind that I wanted to blend spearmint and peppermint, like I usually do at home whenever I do use mint in something.  But then, a couple of months ago, two different friends contacted me to see if I was interested in taking some mint off of their hands… both of their home gardens had BUMPER CROPS of mint this year!  And lo and behold… one of them was growing spearmint, and the other one was growing peppermint… My planets had finally aligned!!@  🙂

Warning — this jelly is NOT BRIGHT GREEN; I didn’t add any food coloring to it; preferring to have no artificial ingredients in it, so the color is the natural color that steeped mint produces… This jelly was produced from freshly chopped and steeped spearmint and peppermint leaves… it was steeped slowly, overnight, ,then strained, leaving a few of the minced leaves in for flavor and appearance.  Then I made the jelly, using raw cane sugar [my usual ‘go to’, and wildflower honey… honey blends so beautifully with mint, and that pairing is reflected beautifully in this jelly!

I’m oh, so thankful for the bountiful gift of mint that I received [man, it takes A LOT of mint to make Mint Jelly!]  For you Mint Jelly lovers out there, or anyone who would like to try a fun, standard jelly with a ‘Ken’s Perfekt Jams’ twist, you really should give this taste treat a shot!!
