Peach Melba Jam [Peach & Raspberry with Vanilla]

Yup… another jam inspired by a dessert… it should be a theme or a category on this site!!

I’ve mentioned previously that once a year I go to my ‘happy place’… In Seattle, there’s a Men’s Knitting Retreat that I attend every year.  I look forward to it all year long, and once I’m therre, I’m in heaven — I get to see a bunch of people that I love and wish I got to see more often, and I get to knit for hours on end.  There are workshops, so I get to strengthen my skills, and the camaraderie just can’t be beat — truly, MY HAPPY PLACE.  Each year, we get grab bags full of goodies that local merchants and individuals donate, and each year, I create a flavor for my knitting buddies, and make up gift jars to go in our grab bags… this year’s flavor was Peach Melba Jam.  The guys LOVED IT, and I’ve gotten numerous requests for it to become an available flavor, so it is my first new flavor release this year…

It’s inspired by a dessert that my Paternal Grandmother, Truella, used to make… Her Peach Melba had peaches AND raspberries in it, with LOTS of vanilla… most Melbas that I see are peach, with a raspberry sauce or jam on top, so Truella’s was different — and the inspiration for this jam.  This jam is bursting with peach and raspberry flavor, with just a kiss of vanilla that sort of blooms on the tongue — I’m really proud of this jam!
