**FLAGSHIP FLAVOR!**
This jam has been with me since the very beginning… it was born from an overheard conversation at a local food and craft fair.
As I was walking around with a couple of friends, we stopped a booth that was selling jams, preserves, beef jerky, etc. As I was making my way through all of the jars of pickles, canned fruits, and canned vegetables, I overheard a woman talking to the woman running the booth. She was on a quest; she had recently taken a trip to Hawaii, and the restaurant she stayed at served Pineapple Jam on their brunch buffet every morning. She tried to find some to take back with her before she left, but she didn’t find any for sale. After she arrived home, she continued looking for it locally, and still couldn’t find it… At that point one of my friends pulled me aside, and said, ‘I bet you could make it — your jams are awesome!’
Two weekends of experimentation, and a jam was born!
This jam is sunshine in a jar… A festive, tropical treat; a jam that started out as my favorite gift to give during the holiday season ended up becoming a flagship flavor for this website. To this day, it is one of my top five flavors that I make, and sell out of consistently and steadily throughout the year!

I’ve always been a big fan of pineapple, but pineapple jam would never have occurred to me. Thanks to Ken, it is now my FAVORITE. Just a plain old sandwich, peanut butter and pineapple jam on wheat bread, is such a treat! Sweet without the sometimes-excessive sweetness of strawberry, and that wonderful tang. I could eat it every day! I imagine it would be great as a filling in desserts as well; one day I will try it.
