I have a special bond for Port Wine…
I have an egg yolk allergy, which means that most desserts are off of the table for me when dining out. When I was a child, I would have turn to my ‘safe’ desserts, like fruit pie… but when I became an Adult, I gravitated towards cheese plates, dessert wines, and Port for dessert, and I found that I had a special affinity for Port Wine.
I wanted to share my fondness for Port Wine with you by developing a jelly from it, and after weeks of experimentation, I am so very pleased with the results, so I am offering them up to you here today! They would be AMAZING on a Cheese Platter, or Charcuterie tray; I had some last night spread on a couple of shortbread cookies and it was DIVINE that way, so yes, this jelly would make an excellent cookie or macaron filling; or if you’re looking for a beautiful gift, this jelly, given alone, or paired with either my Bellini Jelly, or my Champagne Jelly [or both!] would make a wonderful gift!
This jelly has a full, wonderful, and expansive flavor that beautifully captures the flavors found in a glass of Port – give it a try!
