I spend a lot of time experimenting with flavors, cooking up test batches jams and preserves to see what will work for me, and what I want to ‘put out there’, so to speak…
A couple of months ago, when I was experimenting with flavors for the special jam I wanted to do for the men’s knitting retreat, I was playing with a pear jam; I had just made the Apple Pie Jam, and I wanted to do something with the pear that didn’t have the same spice profile… so I played with amping up the citrus a bit, and relying more heavily on vanilla… and I knew I wanted to see the vanilla beans floating in the jam… so I got out my vanilla paste, and I kept adding beans… and adding more… and adding more… before I knew it, I went through an entire jar of vanilla bean paste!!
But the flavor… oh, my lord the flavor… I have to say, and I don’t say this often — this may be my new favorite flavor of all of the jams that I make…
Like the Raspberry Mango Jam, this jam uses easily 50% less sugar than I normally use. The vanilla flavor is pronounced, but not overpowering. Pear and Vanilla — it’s a perfect marriage.

This one right here is my personal favorite. I’d give it ten stars if I could, it’s that delicious. I didn’t know what to expect when I first ordered it (how do pear and vanilla work together?) but it is truly one of Ken’s most unique offerings. And there’s no skimping on vanilla here—you really can taste the vanilla bean as its own component. It is worth noting that this one tends to be a little thinner in consistency than some of the others. Doesn’t change how delectable it is!
