White nectarines aren’t peaches y’all… but they are both YUMMY in their own ways…
Whenever I have a nectarine, I am always blown away by the texture, the sweetness, and the delicate, almost floral flavor. When I make this, I’ll visit the Farmer’s Market two to three times a week, and I’ll keep tasting them, cause there is this TINY window, late in the season, where nectarines end up tasting almost candy like, with a sweetness that blooms, and layers of flavors that seem to get more and more complex the later you get into the nectarine season… and then all of a sudden they are gone. And you have to wait a whole year until you can try again.
I missed that window last year, but I CAUGHT IT THIS YEAR! This jam is complex, delicate, and a beautiful shade of ‘peachy pink’, taking its hue from the red flesh where the fruit comes in contact with the pit of the nectarine. It has the most amazing aroma, and it is… to toot my own horn, ABSOLUTELY AMAZING.
