Do you miss summer? Well, you won’t after you taste this jam!!
Whenever I make any sort of Strawberry Jam [the Strawberry Tequila Jam comes to mind], I like to wait for the late season strawberries… to me, they seem sweeter, and the flavor seems more intense. I know that locally, the later season berries are allowed to ripen on the vine longer, and I think that contributes to the changes in the flavor profile, versus strawberries picked at any other time of the year.
I took those berries, bought direct from a farm in Oxnard, and coupled them with hand chopped limes, prepared in the same way I prepare them when I make Lime Marmalade [ohh… it’s been a while; I should think about making some early next year!!], and macerated the strawberries and lime pieces together so that the flavors could meld and blend… and the result is a beautiful jar of summery goodness, just waiting for you to give it a shot… so why don’t you? 😀
