Bellini Jelly [Peach & Champagne]

Anyone who knows me knows that I am quite fond of bubbly — if it’s in a bottle, has bubbles and a cork, I’m there!  Same with any and all cocktails made with any of the bubbly stuff — champagne, prosecco, sparkling wine — I love them all!

Earlier this year, while I experimented with juicer settings during lockdown.  My experiment… Peach juice.  I experimented with getting a fine pulp, which I left in the juice.  Add the pulp from seeded raspberries, blend with champagne, and it made a MAGICAL cocktail!  And as my mind usually works, it immediately went to, ‘Hmmm… wonder what this would be like as a jam’… A couple of weeks of experimentation, and VOILA!  There you have it!

With this jelly, you can taste all of the components — the fresh, summery peaches; the tart, sweet, and bold raspberries; and the luscious champagne… they blend beautifully in this jelly, and the color is EXQUISITE.
