Lime Marmalade

Meet the hardest working member of the Ken’s Perfekt Jams team:

The lime tree in my backyard!!

All jams, jellies, and preserves need acid in order to jell; and thanks to this year round, heavy producer, I always have a consistent, high quality and pesticide free source for lime juice!  The juice from these limes have gone into every single jar of jam, jelly, marmalade or preserves that I have produced, since we moved into this house!!

Every couple of years, we get a bumper crop in the weeks between Thanksgiving and Christmas; and when that happens, I take that bounty and make Lime Marmalade!  This year our tree is producing quite heavily — probably the largest crop I’ve seen in years… these limes are large, fragrant, and incredibly juicy; with the just barest hint of sweetness in them. I love these limes!  And I love this marmalade!

My Lime Marmalade is the O.G. flavor of my Flagship Flavors; this was the first flavor I gave as a gift to theater friends right before I started selling my jams… This jam was amongst the original offerings when I finally put my jams up for sale.  This marmalade is my foundation flavor, and I am thrilled that it is back in the line-up… Enjoy!
