Sunshine Jam [Peach & Pineapple]

I had the most amazing Fruit Salad during a recent trip down to the San Diego area…

It was quite simple — chunks of peaches and pineapple, dressed with a light and tangy Citrus dressing… it was absolutely DELIGHTFUL; and while I was eating it, my mind did what it always does, and I started thinking about turning that combo into a Jam… So I played around, and experimented, and lo and behold, IT’S HERE!!  And I’m quite proud of myself; I really feel like I captured the flavors I experienced in that salad with this Jam!!

It’s sweet, and tangy, and to me it just embodies Summer, and Sunshine — hence the name!  Plus the name of this jam is an homage to my Father-In-Law; Sunshine is his nickname for me.  I think I’ll make this jam my gift jam for the 2026 Men’s Knitting Retreat…
